Grand Opening of Perle Mesta Restaurant by Chef Black

Chef Andrew Black, acclaimed as a hometown hero by Visit OKC and twice voted Best Chef of OKC shared insights into the vision behind the highly anticipated grand opening of Perle Mesta restaurant at the historic Skirvin Hotel, scheduled to welcome guests on June 24. Recognized for his culinary expertise in Oklahoma City establishments like Black Walnut and Grey Sweater, and his 2023 James Beard Award, Chef Black's latest venture promises to be a transformative experience of European luxury and hospitality.
Inspired by the legacy of Perle Mesta, a celebrated hostess known for her lavish soirées, Chef Black seeks to recreate the glamour and sophistication of bygone eras, inviting guests to indulge in an unforgettable culinary experience.
"After the simplicity that took over from the aftermath of COVID-19, there's a resurgence of interest in luxurious dining experiences without the hefty price tag," said Chef Black.
The aim of the restaurant is to provide an intimate dining experience reminiscent of a time when tableside attention was the standard. From Parisian Garden high tea ceremonies to curated cocktail parties, the restaurant’s goal is to capture the spirit of celebration and luxury with an a-la-carte menu.
Chef Black plans to offer familiar dishes while incorporating local ingredients. One standout menu option is the sorghum-glazed sea bass, inspired by his culinary exploration in 2006 when he first came to Oklahoma City. Sorghum, a sweetener akin to molasses, holds a special place in Wewoka's history that is celebrated annually at an award-winning festival, a premier attraction in Oklahoma.
Central to the restaurant's ambiance is its meticulously designed bar which pays homage to Perle Mesta's legacy as a renowned hostess known for throwing unforgettable parties. “When I came here and opened Park Avenue Grill in 2007, one thing I remember quite vividly is New Year's night in the lobby at the Skirvin in the restaurant, one o'clock in the morning, everyone just hugging, laughing and drinking. And it was like the modern-day Great Gatsby, so coming back, gives me a chance to bring that back.” Black said.
